In the Philippines, munggo can be use as an ingredient for dessert or serve as a main dish. I remember about the familiar taste of the many soups from my college years. One of the soups I had is the cheap and nutritious ginisang munggo (saut\u00e9ed mung beans). This soup was regularly served for lunch in the eatery nearby the college campus I attended. I enjoy the dish when the eatery cooked the soup with coconut milk.<\/p>\n<p>As far as I know, this particular dish is widely prepared in Iloilo and Antique area of the Philippines. They usually put batwan (bat-wan) or Garcinia Bunicao as a souring agent in this Visayan cuisine. I cannot find any batwan where I live so I used lemon as a substitute and to my surprise I achieved the taste! I would love to hear from you about the origin of this type of soup. Please feel free to comment at the bottom of this page.<\/p>\n<p>Below are the ingredients that make the tasty, yet savory, bowl of soup I remember from my college years!<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Prep Time:<\/strong> 10 min.<\/p>\n<p><strong>Cooking Time:<\/strong> 1 hr. and 10 min.<\/p>\n<p><strong>Serves:<\/strong> 6<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 lb. pork belly &#8211; cut into bite sized pieces<\/li>\n<li>1 can of 280 g (~10 oz) jack fruit in can-drained and cut into bite sized pieces<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-347\" src=\"https:\/\/kattypem.com\/ramens-recipes\/wp-content\/uploads\/sites\/5\/2021\/06\/IMG_3443-scaled-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/kattypem.com\/ramens-recipes\/wp-content\/uploads\/sites\/5\/2021\/06\/IMG_3443-scaled-300x200.jpg 300w, https:\/\/kattypem.com\/ramens-recipes\/wp-content\/uploads\/sites\/5\/2021\/06\/IMG_3443-scaled-1024x683.jpg 1024w, https:\/\/kattypem.com\/ramens-recipes\/wp-content\/uploads\/sites\/5\/2021\/06\/IMG_3443-scaled-768x512.jpg 768w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<ul>\n<li>\u00bd cup mung beans<\/li>\n<li>2 cups water \u2013 for boiling the mung beans<\/li>\n<li>3 cloves garlic \u2013 finely chopped<\/li>\n<li>1 medium size onion \u2013 diced<\/li>\n<li>1 stalk lemon grass &#8211; bruised, folded and tightened with kitchen twine<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-242\" src=\"https:\/\/kattypem.com\/ramens-recipes\/wp-content\/uploads\/sites\/5\/2021\/05\/IMG_3022-scaled-300x168.jpg\" alt=\"\" width=\"300\" height=\"168\" srcset=\"https:\/\/kattypem.com\/ramens-recipes\/wp-content\/uploads\/sites\/5\/2021\/05\/IMG_3022-scaled-300x168.jpg 300w, https:\/\/kattypem.com\/ramens-recipes\/wp-content\/uploads\/sites\/5\/2021\/05\/IMG_3022-scaled-1024x575.jpg 1024w, https:\/\/kattypem.com\/ramens-recipes\/wp-content\/uploads\/sites\/5\/2021\/05\/IMG_3022-scaled-768x431.jpg 768w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<ul>\n<li>1 tbsp. fresh lemon juice<\/li>\n<li>\u00bd tsp. ground black pepper<\/li>\n<li>2 medium sized tomato &#8211; diced<\/li>\n<li>1 can 400 ml (~14 0z) coconut milk<\/li>\n<li>2 tbsp. fish sauce<\/li>\n<li>\u00bd tsp. salt<\/li>\n<li>1 tsp. ground black pepper<\/li>\n<li>1 cup of water &#8211; for cooking the pork<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Instructions:<\/strong><\/p>\n<p>1. Wash and rinse the mung beans.<\/p>\n<p>2. Prepare a pot with 2 cups of water.<\/p>\n<p>3. Put in \u00bd cup of mung beans. Bring to boil in high heat then adjust the heat to medium low. Simmer for 30 to 35 minutes.<\/p>\n<p>4. In a separate pan of medium high heat, add the cooking oil then saut\u00e9 the garlic until golden brown.<\/p>\n<p>5. Add the onion and cook for about 1 minute, then put in tomatoes. Stir mixture until the tomatoes feel soft.<\/p>\n<p>6. Add the pork and lemon grass. Pour in 1 cup of water. Bring to boil for 30 minutes in medium low heat.<\/p>\n<p>7. Add the coconut milk and bring to boil in medium low heat for 25 minutes.<\/p>\n<p>8. Add in the cooked mung beans and jack fruit. Add fish sauce and ground black pepper. Let it boil for 15 minutes in medium high heat.<\/p>\n<p><em><strong>\u00a0 \u00a0 \u00a0Note:1<\/strong>\u00a0<\/em>You may add more liquid if you decide to not heavily thicken the soup.<\/p>\n<p><em><strong>\u00a0 \u00a0 Note:2 <\/strong><\/em>You may also add more salt or fish sauce according to your preference for taste.<\/p>\n<p>9.
